We started at Pearl Market and started our morning by watched a cooking demo by The Monterey. They gave out samples of a light rose wine as they taught how to cook pork chops from a wonderful local farm called South Texas Heritage Pork. We watched as they prepared the meat, de-boned it, and seasoned it as onlookers sipped wine and enjoyed the aroma.
I continued sampling pasties, cheese, and other tasty treats as Mara found her way over over to Ms. Chocolatier’s stand and tried some amazing Mexican chocolate toffee. Many people were eager to hear about the samples we were handing out and happy to learn that everything was manufactured and packaged in the United States and truly a green product.
The markets was over at 2pm so we took a short break away from the heat and headed towards the Alamo. There were more tourists out walking around the historical site. We took the stairs down to the River Walk where it was much cooler in the shade. Families enjoyed the restaurants and the ambiance of the afternoon as we talked with visitors and handed out samples.


The demo was actually about demasking of the head, sous vide, and wine, no pork chops. Although if you have our pork chops, you will never go back to commercial pork, promise. Thanks for all the wonderful work, we appreciate all your efforts with this blog. Mark and Kelley
